Gluten Free Banana Oatmeal Pancakes

Delicious gluten free banana oatmeal protein pancakes for the whole family to enjoy. Fast, easy and so delicious that even the little ones will love them!

INGREDIENTS

 

2 medium ripe organic banana
2 large organic eggs
1/3 cups of Alara organic oats
¼ tsp of organic cinnamon
1 cup of organic blueberries
Organic certified pure maple syrup

METHOD

 

Prep: 5 min
Cook: 10 min

 

  1. Put the banana in a bowl and mash it with a fork.
  2. Add the eggs and mix until both ingredients are well combined.
  3. Put the oats in a blender and blend until it becomes a fine flour.
  4. Add the blended oats and the cinnamon to the banana and mix and stir well until everything is combined.
  5. Heat your pan over a medium heat with a dash of vegetable oil.
  6. Pour ¼ cup of the mixture into the pan and throw in 2 or 3 blueberries in each one. Cook on one side for about 1.5 minutes, then turn and cook on the other side for about 1 minute (or until golden brown on both sides).
  7. Serve with some pure Organic maple syrup and blueberries on top and enjoy!
